Can they be used off the switch body?

No, they are meant to be used solely in handheld mode.

Are the shoulder buttons clicky (like the normal controllers) or do they go down?

I have no idea how to answer this so I took a video. The buttons fell very good to me. I like to feel buttons moving & don't like too much resistance. They are not squishy & not exactly clicky either.
