Can these be used with 15mm copper pipe and plastic aswell.

Yep. The usual compression fitting rules apply for both copper and plastic - as in use an insert with plastic, and an olive with both. Easier than the offset nonsense that come with thermostatic bar showers.

Am using hardibacker board to create wetroom shower. Does this get fitted on the board behind the tiles or behind the board?

They are fitted on the board but the wall behind must be solid enough with ply or cement to firmly hold the screws as these fittings actually hold your tap or valve.
