Are the post its in this really red or more pink?

There are pink ones and red ones - two different colours. The red ones are definitely red, as in the picture.

Is the adhesive strip on the same side on every leaf, or does it alternate like a concertina effect?

I know what you mean by the concertina effect,I did buy them once from a local shop and the post-it notes from there had the concertina effect and it really wasn’t what I wanted.I hope this helps you.
