I want to know: how long ago did the timer went off? When time is up and the alarm sounds, does the timer keep counting up?

After the time runs out the timer alarms, if you don't push stop the timer starts going up, at about 40 seconds up to 60 seconds you get a faster beeping sound. At 1 minute after the timer went off the beeping stops.

I just received this and there are no instructions for setting the clock to the correct time?.

Haha, I never set mine until now. How the reset/stop button until the hour flashes, then push the start button until you get to the time. Then push the reset/stop button again and the minute numbers will flash, push the start button until you get to the number you want and then pus the reset/stop button to end the time setting.

Is there a beep when you push the buttons?

Yes. I have found that sometimes when you push the reset button, you have to push the clock button and then the reset button in order to "reset" - at which time it beeps.
