COMMENT: I've had Chicken Paprikash in the Hungarian restaurant that used to be on the 6th floor of the Ghirardelli Square building overlooking San Francisco bay. I've also had it in a couple other places, it was always good. However, and this startled me, MY Chicken Paprikash was the best I've ever tasted. It wasn't that my preparation was anything beyond competent, it was because of the Paprika I recently bought. I did some reading on Paprika, a bell shaped red pepper w/ a point at the base instead of lobes; technically a Pimento pepper w/ mild heat. All the Paprika I'd used since chef school simply added red color but no flavor. And in chef school I only used Sweet Paprika. In my reading it said that Paprika should have a distinct and strong flavor and should be thrown out after a few months because the flavor vanishes into sawdust. In my research I came across a good deal on Amazon: HOT + SWEET SMOKED Spanish Paprika - Kiva Gourmet. This recipe calls for 3 TABLESPOONS of Paprika which is a lot. I used half of the Sweet and half the Hot, Smoked Paprika. UNBELIEVABLE! The flavor of the sauce was unlike anything I'd ever tasted in this recipe before. Gorgeous, mildly hot, smoky rich mouth filling flavor. I wasn't prepared for the magnitude of the flavor change so different from what I remember this recipe before and it's entirely due to the fresh Paprika. Get the Paprika and make this recipe for you and some friends. It will amaze them.
