Malt powder is an ingredient in making homemade pretzels, especially sourdough. If you see a recipe that does not include malt, you are not making pretzels, but rather bread sticks. Once you make pretzels with malt, you will definitely taste the difference. They also give the pretzels that dark caramel color versus that you associate with pretzels.

I add a bit to my bread machine recipe. I use mosty ancient grains: Kamut, Einkorn, a bit of Teff flour. Supposedly makes better crust. Hard to say for sure, but I will continue adding it.
