Fantastic. Easier than tracking down fresh roots. Easily rehydrated.
Myself and my family love Tom Yum soup (and other Thai dishes) but can't often find good quality herbs of those really required for any decent Tom Yum soup. So … I decided to try this, following good reviews from others, and indeed, this is fantastic. Don't be alarmed by the price--this is quite a lot of galangal, given that it is dried and so lots fit in a 3.5 oz package. You only need one or two pieces to hydrate and it will do the job. Don't forget to also get lemongrass and Kaffir Lime leaves--the same company carries them and I'd ordered all three. Delicious Tom Yum ensued! :)

The “secret” ingredient for Thai soup!
Ever since I had some of this, in my very first Thai soup experience, I have wondered what it was, and where to get it. 30 years later, I saw this on Amazon and I am thrilled with the flavor and quality of this product.

Its like ginger and menthol and clove all in one
My main gripe with this is the lack of instructions...I ended up grating into a powder, but is that what I am supposed to do? But, on to the flavor and aroma, this is like nothing I have never worked with before. This stuff has a strong scent of ginger and menthol...with a hint of clove....unlike any other ingredient I have used. I am only concerned with my use, since it does not include any instruction or recipes. Additionally, I do not know how long this stuff should last since there is no expiration date. Still, it gave a unique taste to a Thai dish I made, and I was very happy with it.

Authentic Thai Soup
These galangal roots add authentic flavor to Tom Yum soup. Galangal root can help balance the tartness of some Tom Yum soups; the root will not sweeten or mask the tartness, just add some welcome complexity. I usually add three to four large pieces of root to a pot of soup.

Perfect!
Omg. Yes! Made my first ever Tom yum soup from scratch with the galangal and it was superb. I used 4-6 pieces for 4 large servings of soup. Just perfect.

Don't buy this if you plan to chop it, impossible
There really is no substitute for fresh galangal and while I was appreciative to find this at all in order to make Beef Rendang, it's really more suitable for something where you just leave it in the broth to flavor it like Tom Yum. In the end after soaking it for an hour in boiling hot water I gave up on chopping it and use the liquid in the rendang and also the pieces in the Instapot. I removed the woody pieces before serving and feel there was definitely an "essence" of the unique flavor that is Galangal but next time I will go visit an Asian grocery to get the real thing.Don't forget you can use Amazon Smile when you shop to donate to your favorite charity!
